When building using QMake from command line, you can use e.g.

    qmake QMAKE_MACOSX_DEPLOYMENT_TARGET=10.12

to set the deployment target version.

Remember to check the supported target versions for the Qt you're using:

- Qt 5.12: https://doc.qt.io/qt-5.12/macos.html#supported-versions
- Qt 5.14: https://doc.qt.io/qt-5.14/macos.html#supported-versions
- Qt 5.15: https://doc.qt.io/qt-5.15/macos.html#supported-versions

In short: The minimum for Qt 5.12 is macOS 10.12, while for Qt 5.14
and Qt 5.15 it's macOS 10.13.

I'm not sure what the minimum for Qt 5.9 was, but I believe it may
have been macOS 10.10.
