I tried navigating down the headers but was unsuccessful at finding

Use code.woboq.org

https://code.woboq.org/qt5/qtbase/src/corelib/global/qprocessordetection.h.html#_M/QT_POINTER_SIZE

If I'm compiling on a 64-bit host for a 32-bit target, is
QT_POINTER_SIZE going to return the correct number of bytes for the
32-bit target?

Yes, the various Qt arch macros are for the target system, not the host.
