If you just want some hot standby setup (no load balancing while both
servers are up), and if you are going to run it on Linux, I would
recommend using a setup with heartbeat (for the failover) and DRBD (for
replication of the block device used for storage). I have been using
such a setup for almost three years now (in two different sized setups)
and it never failed on me (except for two occasions on which I managed
to kill both servers at once - totally my fault).

Unless you want to use the most recent cyrus-imapd beta (2.3.1) which
has some cluster support built in.
