Ok, we resolved this problem, it was very simple in the end as I suspected.
The problem was in the /etc/hosts-file where the 127.0.0.1-line only pointed to localhost and localhost.localdomain. Adding a FQDN as well as the hostname helped. We can now create user mailboxes with the @domain.tld extension with the 'virtdomains: yes'. Maybe this should be added to the Wiki?
