The folder name *can* be changed:
Tools -> Accounts... -> Select mail account ->
Click "Properties" button -> Select "IMAP" tab ->
Enter folder name for "Sent Items"
However, the folder you use for your sent mail ("Sent Items" is the
default) *must* be a top-level folder, period, regardless of whether you
have altnamespace and/or unixheirarchysep enabled.
