There are many ways to get what you want.
In postfix there's the possibility to specify a transport table

elsewhere you can play with

default_transport and fallback_transport directives.

Postfix is so well documented. So

1) trace a complete list of your situation and needs
2) search postfix docs to find appropriate ways to do things you need.
