It depends on your goals. Definitely not Sendmail. It's less secure, slower, eats up more resources, the configuration is more obscure. Postfix looks better almost any way you look at it. With Postfix, i use amavisd-new to process email. amavisd-new calls SpamAssassin for antispam processing and ClamAV for antivir. It can integrate many other tools as well. I also installer Razor, which is used automatically by SpamAssassin, to enhance the antispam capabilities. http://www.ijs.si/software/amavisd/ As a webmail app, you can also look at IMP, as a part of the Horde suite.
