If you are already running IMAPd on a UNIX, box, why not install (or
activate) an sshd on the same server, then put an SSH client (Putty, it's
free) on the notebooks and tunnel the imap session, so you get encryption?
You could even tunnel all IMAP in your office, so that the users don't have
to switch settings when travelling. Yes, they will have to log in using
putty,
and that will require a password, but security should be worth it.

Alternatively, look into stunnel, which provides similar functionality.
