The idea is to bind each domain to separate ip address, set these ip addresses to single machine, set up master to listen to different ips and launch imapd, popd with -C paramters, that point to corresponding config files, which contain different spool dirs. Dig this maillist archive, it has pretty good instructions on doing this.
