dont send mails from the shell. Use a mail client.
echo hello | mail -s 'hélo' someuser
will end up as Subject: hXlo
Start Netscape Messanger | compose mail to someuser with subject 'hélo'
will end up as Subject: hélo

PS: If you still didnt get it. Its nothing to do with Cyrus. Its your
mail command and/or your shell settings that are changing the umlauts to
X (i think)
