What version of Cyrus?
If you are using 1.6.x or 1.5.x you could probably rsync over the users
mailbox directories under the mail partiton (usually /var/spool/imap) to the
new server.
You can then rip out the relevant lines in /var/imap/mailboxes and put them
in /var/imap/mailboxes on the new server. You should shutdown the Cyrus
service on both servers when doing this.
Not sure how you would do this with 2.0.x
