We are using it as a test environment (e.g. for IMail 10), the production server is physical because of high load and a huge amount of disk space. Runs without any problem.
If you will use local (SAS) disks or a good storage (ISCSI/FC) it will run almost as fast as a physical machine and we never had any application problems because of virtualization (VMWare ESX) and we are running about 70 virtual machines, including the front end Outlook Web Access, SAP and some Development Servers including MS SQL2005.
