I think the pattern I used (many years ago) called for terrycloth soles. Which sounds kind of slippery. I remember the store-bought jammies having sort of a dotted swiss, only it was rubber dots on a sturdy fabric.
Ultimately I used a firm cotton for the whole thing, with the same fabric for the soles. I quilted together a few layers, can't remember what I used for batting. But I figured that, if it wore out, I could replace the bottoms of the feet easily enough. The first set I made were flannel, and they fell apart fairly quickly. Footie pajamas get a lot more strain than most flannel clothing. Anyway, maybe you can find a non-skid fabric online.
