Hi Matt, #1; you should be able to use any shortcut character, don't know why you had any problem.
#2. The arrow keys should just work between the menubar elements, and there's no special attribute or anything else which will effect how they work. #3. You'll need to google on, or find some examples of, specifying character data using the XML structure named cdata; it allows you to put special characters (including line breaks) into an xml character string.
