Thank you Brother Samuel. I was finally able to compile a newer gregorio
file from the Terminal with
lualatex --shell-escape ___.tex
Would it be possible to compile this directly with TeXShop? Is it
prudent to do that or would it be better to compile gregorio using
Terminal? Many thanks.

Those are old command names (which are no longer supported) which
are raising the errors, so if I had to guess I'd say you've got an
outdated example file from somewhere.
