I believe gPXE does not do anything but text mode. That said, I stated that you can use gPXE to boot, load PXELINUX then run vesamenu.c32 or gfxboot.c32, both of which use VESA graphics and are your best chance to display anything outside the 8-bit OEM code page. I've read something within EFI/uEFI might help but there are comparatively few machines that have an EFI/uEFI boot system.
