Neither it seems to be specific to Apple Mail since I cannot reproduce this
issue (see below). Not sure why your message gets modified - maybe you've using
slightly different mail servers in Mail and Thunderbird? Does it help to rename
Library/Preferences/com.apple.mail.plist and reconfigure Mail.app?
