What I can tell you is that at my company have no deploys with Java 11,
everything is still running Java 8.
In benchmarks I've run recently the situation is a mixed bag, it depends on
the workload.

I don't think we'll switch away from the current setup until Java 8 keeps
on getting security updates just like Java 11
does, which will be until around 2023 (while Java 11 might stop receiving
updates in 2022):

As far as I know (and to the limits of what I've heard), AdoptOpenJDK is
getting all the security fixes.
Checking the AdoptOpenJDK release notes, I see a format that's pretty
similar to the one of the Oracle JDK releases, what are you missing?
