The ImageMosaic is a standard plugin, indeed. It seems the main title of
that page has been changed in the latest 2 months. The previous
documentation was indeed referring to that as a plugin.

That's quite strange. Can you share a screenshot with the available formats
reported on the "new data source" page?
Did you have any exceptions/warning in the logs?
