Hi, Tom Chadwin.

Jetty is included in all GeoServer's Binary(OS independent) versions on
this stable download site, http://geoserver.org/display/GEOS/Stable .

In the downloaded ZIP file, /geoserver-x.x/lib.jetty-x.x.x.jar is that.
And /geoserver-x.x/etc/jetty.xml is config file.

I think your best choice is Binary(OS independent) version install of
GeoServer.
