As Andrea states the audit mode is more or less separate from the rest of
the configuration. During the last refactor of the module
before promoting it to extension I thought it would probably make more
sense to have audit be another storage mode option, along with memory and
hibernate.
If you configure the hibernate storage mode you should see the charts
persist between restarts of GeoServer, but in memory storage mode only the
past 100 requests or so are kept around at anytime and not persisted.
