Which WCS version are you talking about, 1.0 or 1.1?
I guess ArcMap expects the coverage to be described in a specific way, has
expectations.

Afaik that once happened with WFS as well, then Esri improved their WFS
client code.

It would be nice to have ArcMap talk to GeoServer WCS, at the same time it
would
probably be quite a bit of reverse engineering trying to figure out what the
software
expects (plus having a copy of ArcMap around to start with.

Do you have java developers on your end that can try to address this
problem?
