If it's a one-time thing, you can set the EXTRA_ECONF environment variable to contain the extra arguments to ./configure. The contents of EXTRA_ECONF are appended to the end of the usual command, so yours should take precedence. Just be sure to set it only while emerging enchant (and not, for example, during emerge @world).
