two needed, three preferable.
Technically you don't *need* any mx records. Mail will be delivered to the hostname in the absence of an MX record. If you don't have a secondary MX server, sometimes they are more trouble than they are worth, then there is no need for a second or third MX record.

Really? So if I would only use an MX record that points mydomain.com to mydomain.com with a priority of 1, it isn't even necessary?
Yep that's the way it works. On the otherhand I was mentioning it more for completeness than an actual suggestion. I'd go ahead and add an MX, but that's what it's going to look like and it really won't matter if you have one or not.
