We have a lot of Gentoo servers at our company, too. To get stable installs and avoid too frequent updates, we also freeze the portage tree. The problem is that some distfiles disappear really soon on the upstream mirrors. Does anyone know of a fallback mirror which keeps distfiles longer as usual? If there is none, we could possibly provide one by ourselves...
