Unfortunately adding -Werror to CFLAGS is not just possible. Many configure checks rely on the compiler just generating something, ignoring warnings for various reasons. If you add -Werror to your CFLAGS you basically introduce breakage for some autoconf-based packages. What we really should be having is an easy way for post-configure CFLAGS addition.
