It seems the two answers from others took care of most of your 
questions.  FWIW, I don't use portage's build system to manage my kernel 
as I already had a system going for configuring and compiling my own 
kernel when I switched from Mandrake in 2004, and I simply kept using and 
improving it thru today.  (Actually, now, I'm doing direct git fetches 
off of Linus' development kernel. =:^) Thus I'm unfamiliar with either 
portage's handling of the kernel itself or genkernel, the semi-automated 
kernel handling script Gentooers often use, and others are likely to be 
of better help there as a result, so I'll let them at it.

However, if you have other questions or problems, don't hesitate to 
post.  I'm happy to have been able to play my part in the progress so 
far. =:^)
