The version questions are easy to find out. The release build process fetches all the packages from the official online repo. So, they are the latest version that exists on the repo. As for what’s what... The repo is pretty easy to browse (it’s automated too). https://www.ibiblio.org/pub/micro/pc-stuff/freedos/files/repositories/latest/pkg-html/ You can go straight to the latest version info for a package by just tacking on the package name.html like https://www.ibiblio.org/pub/micro/pc-stuff/freedos/files/repositories/latest/pkg-html/aefdisk.html Also, there’s that CSV list.
