I just went over the installation steps at [1]. I executed on a clean
CentOS 7:

yum -y localinstall
http://fedorapeople.org/groups/katello/releases/yum/3.4/katello/el7/x86_64/katello-repos-latest.rpm
yum -y localinstall
http://yum.theforeman.org/releases/1.15/el7/x86_64/foreman-release.rpm
yum -y localinstall
https://yum.puppetlabs.com/puppetlabs-release-pc1-el-7.noarch.rpm
yum -y localinstall
http://dl.fedoraproject.org/pub/epel/epel-release-latest-7.noarch.rpm
yum -y install foreman-release-scl
yum -y update
yum -y install katello

and all the packages resolved for me. You mentioned some packages seemed to
be missing, which ones? What additional repos did you configure to get
these packages? If you configured the nightlies to get additional packages,
then it is probably the cause why the packages from nightly are being
installed on update, but without knowing what command you executed exactly,
it is only my best guess. I would recommend going over the installation
steps again on a clean system,
it will probably be quicker that trying to clean the existing system.
