The file renderer should probably honour synth.audio-channels, but currently it doesnt. It always outputs a stereo file, because fluidsynth is a stereo synthesizer.
If you need monophonic audio you'll have to do it yourself deciding whether to mix left and right channel or only take one of them. synth.audio-channels cannot make this decision for you.
