cmake does complain:
ALSA:                  no

So it looks like you are not having the libasound2-dev package installed.
Hard to tell without the full cmake log though. The same problem should
also arise if you attempt to build fluidsynth 1.1.6.

Note that it neither finds the LADSPA dev files:
LADSPA support:        no
