I connected Evolution iCloud to get my emails (IMAP), contacts and
calendars using the Apple App-specific Password.

This is a bug in evolution uncovered by a recent change in iCloud. It
has been discussed here last week.
See https://gitlab.gnome.org/GNOME/evolution/-/issues/1468 for the bug.
evolution has now fixed it.
As for having that fix on Ubuntu see

Sebastien mentions he has already uploaded the fix to Ubuntu 20.04
(focal), albeit looking at
https://packages.ubuntu.com/focal-updates/evolution-data-server it
doesn't seem to be there yet.
