I usually prepend "env GTK_THEME=Adwaita:dark" to command lines
when I want to apply the Adwaita dark theme to specific applications
over the global theme.
I do this in the iBar icon settings ("Application" entry) or in the
.desktop file. For example, my libreoffice-writer.desktop file has this
line "Exec=env GTK_THEME=Adwaita:dark libreoffice --writer %U".
