There is not really any up-to-date and comprehensive guide as far as I know.
There is an Edje book by Ben Rockwood, which is quite out of date these days, but it does provide useful introduction to the core concepts of Edje.
I also wrote a blog entry about whacking together an edje interface for my moon module  last year. It might help give some clues: http://edevelop.org/node/1901

Otherwise the a good way to learn is to look at the .edc sources in e to see how things work.
