I would think you're out of main memory, so thunderbird is being pushed into swap space - ie the program's memory is written to disk, and pulled out again when requested; a VERY slow process compared to keeping everything in main memory all the time. I'd recommend using a low-memory WM (eg fluxbox) until you can buy more RAM, and don't have too many apps open at once.
