Remember only works for the number of instances you remember.  So either
open all the Eterms you're ever likely to use, set them all to
Borderless, and Remember them; or copy windowmatches.cfg to
~/.enlightenment and add the following two lines to the end:

USE_BORDER_FOR_CLIENT_WITH_CLASS("Eterm","BORDERLESS")
USE_BORDER_FOR_CLIENT_WITH_NAME("Eterm","BORDERLESS")
