Actually, mutt puts single quotes around the charset itself. E.g. when I
view an html mail, at the top of the message mutt displays:
[-- Autoview using elinks -dump -eval "set document.codepage.assume =
'ISO-8859-1'" '/home/joost/tmp/muttLrLrTU' --]
BTW, I have changed the .mailcap entry suggested by Witold to:
text/html; elinks -dump -eval "set document.codepage.assume = %{charset}" %s;
copiousoutput
