It would be very easy to do...the hardest part will be removing about, IIRC, 15 
components associated with the 20m section and installing the 80m parts kit 
available from Elecraft.  You'd then assign 80m as band 2, leaving 40m as band 
1.

I changed my old 40/20m board to an 80/17m board so I had twice the amount of 
stuff to do, yet it all went smoothly due to the high quality of the PCB 
material which tolerated the removal and installation of many components.

My 80m parts kit did not, however, come with any toroid winding wire, nor did 
it have the two RF board components supposedly to be added to support 80m 
operation:  C78 and RFC8.  You may want to inquire about these three items when 
you place your order.

There is one disadvantage to having two filter boards with the same band on 
them...in your case, 40m.  The K1 can only store one LCD display calibration 
constant per ham band.  Unless the hetrodyne crystals for 40m on both of your 
filter boards oscillate within about 100 Hz of each other, the LCD frequency 
display for 40m on one filter board will be off from actual frequency.
