Ah great - this is the sort of thing I was looking for. Surprisingly
hard to get the right answers when searching for rsync and exclude.
exclude:
+ /etc/
+ /etc/**
+ /backup/
+ /backup/dirvish/
+ /backup/dirvish/*/
+ /backup/dirvish/*/dirvish/
+ /backup/dirvish/*/dirvish/**
