It looks like you can specify a branch in the %source command, e.g.
config/tools/rtems-binutils-git-1.cfg has
 %source set binutils
git://sourceware.org/git/binutils-gdb.git?fetch?reset=hard?branch=master?checkout=%{binutils_version}
