Yes, this would work!
NB. the particular overrides are added in the real Koji buildroot, which
itself may be accessed via baseurls (External Repositories in Copr)
like:
https://kojipkgs.fedoraproject.org/repos/f40-build/latest/x86_64/
(alternative to `mock -r fedora-40-x86_64 --enablerepo=local`)
