It's probably this (from /etc/mock/templates/fedora-rawhide.tmpl):
config_opts['chroot_setup_cmd'] = 'install @{% if mirrored
%}buildsys-{% endif %}build'
I imagine you would want to add more names to that install command. I
have not actually tried it, however.
