Now that we support human-readable names (instead of just integer values) for
the various channel/map send-options (as added in bug #61127), we should use
them both in the Tomcat documentation and in the sample configuration files we
use.

To be clear, the integer values should continue to be documented, but the
self-documentation of the human-readable option masks will make both the
documentation and the sample files much easier to read and understand.
