overall, could we get rid of the documentation clutter in server.xml, 
make it readable on one page, with small comments here and there.

Great defaults :)

I think you could consider using that in the default server.xml 
(assuming it works well enough), with a comment referring to the 
documentation page. Otherwise, the config looks a little bit 
frightening.
