I think "Practical Cryptography" [1] is a particularly good book to start with. It looks like the updated version is named "Cryptography Engineering" [2]. I also reference the "Handbook of Applied Cryptography" [3] quite often, but it might be concerned too much with crypto algorithm implementation details. It looks like [2] has some material about PKI which I don't remember reading in [1], which might be useful.
