Welcome, and thanks for your interest :) We don't have much when it comes to documentation (yet), and I don't know of any plans regarding this, someone else is probably better suited to comment on it.
As far as getting started goes, there are some bugs marked E-Easy<https://github.com/mozilla/servo/issues?labels=E-easy&page=1&state=open> that you can try once you have some familiarity with Rust.
