I don't think there are any particularly major version-specific issues with the GTK3 builds other than the DND issue (which I've just posted a fix for). GTK 3.4 seems like a good target to me, we've been linking against features exposed in later GTK versions conditionally at runtime (i.e. hidpi) and it seems to have worked fine so far.
