I discovered crashes like this can occur even with a single GPU and single monitor. Then fixed it in the final version of triple buffering that landed in Mutter 48. The cause was bufferless KMS updates like Night Light animations or even cursor movement in some cases. But Night Light is probably the biggest trigger for this.
