It shows instead of the new icon (execpted something like this: https://commons.wikimedia.org/wiki/File:Thunderbird_2023_icon.svg) the old Thunderbird icon. File needs to be replaced, which is probably located here: /snap/thunderbird/350/meta/gui/thunderbird.png.
