This bug also hit me in early April, on Jammy (Ubuntu 22.04.2 LTS). Settings->Sound suddenly had only the S/PDIF option; HDMI/DisplayPort was gone, as well as the analog option.
Upgrading to Kinetic and then Lunar brought back HDMI/DisplayPort, which is the device I need. The analog line output is still missing, as are the analog mic and line inputs.
